JOB DESCRIPTION

Luxury Hotel in Bangkok central area belonging to a renowned international chain is now looking to refresh its FB management team with new talents, if your experience comes from the luxury FB business and 5+ years stands behind you to prove it, then this might be your opportunity to join this successful team. This role is available for Thai applicants only. 

Job Purpose

  • Responsible for planning and organising annual and monthly promotions, monitoring day-to-day operational efficiency of the bars and maintaining guests’ satisfaction in accordance with Peninsula standards and hotel procedures and standards
  • Responsible for creating and implementing new strategies to maximise beverage (and food) revenues and profitability for the bars, and for monitoring and controlling the resources to minimise costs and expenses for the bars.
  • Specific responsibilities include preparing and monitoring the budget and costs for the bars along with special promotions (e.g. cocktail promotions, festive seasons and guest bartender events)


Key Accountability

  • Strategic and Financial Planning
  • Ensures that all restaurant and company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to, including the timely and accurate reporting of financial information.
  • Develops and contributes to strategic planning of the department in accordance with the hotel objectives
  • Understands the business complexity, competition in a market and overall long-term vision of the company
  • Understands internal and external customers, suppliers and competitors and identifies areas for improvement
  • Understands and implements financial principles and procedures that improve productivity and efficiency
  • Supports leaders in the implementation and delivery of business results
  • Operation Management and Planning
  • Has extensive expert knowledge of wines and all other beverages.
  • Plans, organises and directs team members to ensure the highest degree of guest satisfaction, which are well-reflected in Coyle and Forbes
  • Establishes safe working conditions and practices by following the Fire Life and Safety Procedures of the hotel and follows and applies to the procedures of the hotel
  • Maintains service standards through adherence to The Peninsula Standards, directing and supervising daily operations, overseeing the standards of items delivered to guests and maintaining interior decorations and materials
  • Ensures overall operational efficiency by overseeing the setup of tables and seating arrangements
  • Manages the average check and promotes food and beverage sales
  • Attends training courses and departmental meetings as required
  • Creates personal contact with guests without becoming over-friendly
  • Updates the operations manual based on revised policies and service procedures (if needed)
  • Encourages self to be creative and innovative.
  • Human Resources Planning and Organisation
  • Accomplishes human resource objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counselling, and disciplining employees responsible for working and managing in all housekeeping areas; communicates job expectations; plans, monitors, appraises and reviews job contributions; plans and reviews compensatory actions; enforces policies and procedures
  • Creates and executes staff engagement activities to keep the team motivated and engaged, and conducts regular staff meetings
  • Ensures that fair scheduling in the department is in place according the policies set out for the five-day workweek
  • Oversees the scheduling of duty rosters to ensure efficient provision of service
  • Provides training for staff and evaluates their performance on a regular basis
  • Resolves guest complaints and problems and provides feedback on complaints for future improvement
  • Maintains and improves staff morale by delegating specific responsibilities along with proper authority and guidelines to subordinates while remaining accountable to Food and Beverage Management for staff actions
  • Encourages staff participation in brief meetings and training sessions
  • Works with departmental trainer and train-the-trainer initiatives to create new training topics and review existing ones related to tea, food and beverage products as well as service procedures for the team
  • Creates development plans for potential team members
  • Ensures the same departmental goals are shared and explained to the team
  • Ensures the highest level of Health and Safety and Hygiene are maintained, reporting employee and guest accidents, and responding properly to any hotel emergency
